Wuliangye liquor is made from 5 well-selected grains including broomcorn, rice, gluttonous rice, wheat and corn as materials. By using " Baobaoqu Yeast" as diastatic ferment, it is finished through a process of " brewing" , " aging" , " blending" , " inspection" and " packing" .
 
   
  Production is carried out by the adoption of the fermenting techniques such as " around-cellar circulation" , " breeding grains of solid state" , " dual wheel bottom fermentation" and " quick aging and maturing with manual cellar earth" and through operations such as " stratified grain removal" , " mixed distillation" , " harvesting liquor from different sections" and " harvesting liquor and storing in jars according to the liquor quality" .
 
 
   
    It refers to the aging process of Wuliangye liquor following the production, making use of a series of physical and chemical transformations of liquor base during the process of storage to improve the sensory taste of the liquor base thus to improve its quality.  
   
  " Base liquor" is stored after quality inspection and classification. When the storage period ends, the blending personnel will conduct sensory evaluation and physical and chemical analysis for each jar of liquor and then blend them according the requirements of different products on quality and style. The blending technique of Wuliangye is uniquely characterized by a combination of computer-controlled blending system and manual taste and evaluation.  
 
  For the purpose of quality assurance, Wuliangye Group adopts modern analysis technologies and instruments in the full process of production. Gas chromatographs from HP, Shimadzu, PE, etc. and modern analysis instruments such as atomic absorbing instrument and mass spectrometer are adopted by Wuliangye Group to carry out comprehensive quality control.  
 
  Packing is an important process of image building and anti-counterfeits for Wuliangye liquor. In order to protect the interest of consumers, Wuliangye Group has conducted innovations on packing materials for many times, including changes from common glass bottle to crystal bottle, to PET bottle, and from plastic bottle cap to 3-anti-counterfeit bottle cap, to laser anti-counterfeit bottle cap and to anti-counterfeit bottle cap of 3M regressive reflection coating.
